I’ll start with a particularly (in)famous one: Ghost in the Shell 2.0.

Over ten years after the original Ghost in the Shell movie was released, Mamoru Oshii went back to the film and re-worked it, changing the tint of the film from greens and blues to oranges and reds to better match that of Innocence (and possibly to distance it from The Matrix), recasting characters, and redubbing/rewriting several lines. Worst of all, several gorgeous, cel-animated sequences were replaced with shitty mid-2000s CGI renders.

If you’re going to watch this movie (which you absolutely should if you somehow haven't already), stay as far away as possible from the 2.0 version. The original version has been released in bluray in just as good of a quality, and you’re only doing yourself a disservice by watching this disaster of a re-edit.

Ive been going on a nostalgic toonami and adult swim binge lately watching some shows and finally caught up to cowboy bebop and have come to some conclusions.
For years ive heard about them changing the songs, sound effects and redoing the dub on these modern releases and after watching some of them i kinda see why people now really dont get into these older shows, its because you literally arent getting the same product we were exposed to years ago.

Example: here is two videos of the same iconic scene from episode 4. One is a simple vhs tv rip and the other is from the old blu ray.

Ignoring the quality of the vhs rip why is the audio so different between them?
Why did they feel the need to redo the sound effects and bgm? Some are completely missing and some are completely different.
Someone that never seen it when it was on tv wouldnt know there was ever a difference but someone that did would hear it immediately because you dont just remember seeing it but also HEARING it.
Depending on your perspective this isnt as bad as what was done to other shows like gundam 0083 for the modern releases, where they redubbed the ENTIRE THING over and both gato and kou now sound like they are out of breath with all the emotion sucked out and all the sound effects feel like they were royalty free stuff taken from youtube.

Why do this?
To clarify, this isnt complaining about something being dubbed and them changing out the bgm and sound effects with it, this is entirely directed at modern rereleases and the changes made with those.

An example of an update actually improving stuff. Though, the original isn't really as bad as the description implies IMO.

Notice how Harrisons breathing can be heard, you can hear the glass break when Murdock presses the button, Spikes mouth isnt out of sync with the audio when he says they wont bitch about them blowing up the missile, you can hear the sound of the missile release from her ship, Spikes cannon sounds arent different nor is the display making any sound when it pops up, his cannon sound isnt different, the BGM isnt out of sync, Fayes missiles make a sound when they trail after firing, Spikes alarms arent different and niether are the sounds as they exit the gate.

Does the terrible redub of FotNS count?

Video/DVD releases improving the TV airing isn't a rare thing at all. It's been a cost/time-cutting measure for decades. Even with that LU E4 is infamous for looking like garbage.

Ill never watch or buy an old show modern release ever.

Can someone explain to me why manga uk redubbed the guyver ova series that u.s. renditions made back in the day?

Are you asking why two companies produced English versions instead of just re-using them? That other dub is owned by the other company, and just because you own the rights to distribute something now, does not give you access to the previous dub. So it's often more work to re-use a dub than to just make a new one.

Eva was famously dubbed in English twice by ADV and then by Netflix. For fans, just pick whatever one fits the most.

They didnt, the manga one was done by us renditions(which shut down in 95) before they aquired those properties they for reasons i cant explain chose to redub the main character for the change of a va for a single character.
They didnt redo the whole thing like some other properties had done to them when they were aquired by another.

I dont recall eva being dubbed twice by ADV, can you explain this some.

Oh, Evangelion Director's Cuts is a perfect example. The show was rushed out the door, and whoops its now a massive phenomenon. So now that they have more time and money, they went back and touched up some of the older episodes towards the end that were rushed and had some errors and sloppy visuals. They also added additional scenes to help people understand the context of the show.

Do you mean that ADV had to redo the dubs on the last four episodes because of the directors cut thing?
The ADV version was released after the movie was already out so those episodes are also from that, arent they?
