Normally you should start with 6 (first windows game) and work your way up in numerical order. If it's too hard for you play 7 or 8 and then go back to 6. You should play the PC-98 games (1-5) only after you get familiar with the series.

Start with 8. It's not so tough as other games. Also, there is plenty of famous and popular characters, like Eirin, Mokou and others.

Also you can start with 6. If you somehow beat it, then every other touhou will be a piece of cake for you lol

I dunno man, EoSD was my first touhou game and I didn't find 7 that much easier than it, probably because it's more consistent in its difficulty in my opinion rather than 6 where the first three stages are piss easy and then it fucks you.

Still one of my favourite touhou games just because of it's simplicity. You just dodge bullets.

Dunno, when I first started playing Touhou games I knew next to nothing about the series. So I just started playing the games in order. I don't think it affected my experience with the series negatively.

Well, unless by "more Touhou" you mean more games like Touhou. Then you could start with Seihou Project (game series inspired by Touhou), then Kiki Kaikai/Pocky & Rocky (game series that inspired Touhou). There's also a newer Touhou clone – Len'en Project. You can later try out some classic shmups.
